Currently, cultural heritage in general, and intangible heritage
in particular, goes far beyond being one of the emerging phenomena of research. One of the areas of cultural heritage is agri-food; food systems and food culture generate particular cultural forms, manifestations and values that underpin the territorial identity of contemporary societies. There is no political agenda that does not include a section on agri-food. For just over two decades, UNESCO has been declaring highly significant food manifestations of specific cultures. Heritage resources are being incorporated into rural development projects, particularly in what is known as ‘new rurality’, where rural areas provide, beyond raw materials, goods and services in line with the demands of today’s complex societies. In this context, we are currently working on several projects at the UCA.
